The following is a collection of recipes that I have created over the last 15 years of chefing using all manner of hot sauce, fresh chilli & all things hot. These are all tried n tested dishes that have been on restaurant menus in Melbourne, Auckland, Wellington & Christchurch yet are still easy to recreate at home with simple ingredients & directions.
